
You guys, one of my besties, Amanda, took me to Limewater in Frankfort, KY tonight for dinner, specifically to get the New England-style halibut for dinner, and let me tell you— it was an experience. It’s a family-owned bistro and bar located in the historic Glen Willis house, which sits on the banks of the Kentucky River. We started off our meal with the greek salad and the pork belly lettuce cups. When I tell you that the halibut was one of the best dinners I’ve ever eaten in my entire life, I am NOT kidding! It was stuffed with Ritz crackers and a shrimp stuffing with green beans, capers, beurree blanc, and potato ribbons. I give it a rating of a 20 out of 10…I love fish. Salmon is probably my favorite fish, but this…THIS…has forever changed my mind. I’m now a ride-or-die-Limewater-halibut lover.
If you are alive and breathing…and you love fish…this is a MUST-HAVE dinner! Seriously, do yourself a favor and try it before you die. Trust me— you’ll be thanking me (and Amanda) later.
